Pumpkin Pie Chia Pudding

Fall is my favorite season and pumpkin is my fav vegetable err no fruit?

Did you know pumpkin is scientifically a fruit but nutritionally close to a vegetable?

  • Orange color comes from beta carotene Rich in vitamin A and C

  • Rich in Iron, Folate

  • Rich in Lutein and zeaxanthin - reduce the risk of macular degeneration

  • Relatively low in calories as it’s filled with water

  • Good fiber content - 7 gm in 1 cup

  • Rich in antioxidants

Ingredients:

  • 3/4 cup of pumpkin spice flavored almond coconut creamer and water

  • 2 tbsp chia seeds

  • 1 teaspoon of pumpkin spice (From Trader Joe's)

  • 1/2 teaspoon date syrup (From Whole Foods)

  • 2 tbsp unsweetened pumpkin purée (From Whole Foods)

  • 1 teaspoon nuts (I used pumpkin seeds yesterday and walnuts today)

  • 1 teaspoon maple extract (not syrup) (From Whole Foods)


Instructions:

  1. Combine ingredients and let it gel in the fridge

  2. Enjoy!
