Fall is my favorite season and pumpkin is my fav vegetable err no fruit?
Did you know pumpkin is scientifically a fruit but nutritionally close to a vegetable?
Orange color comes from beta carotene Rich in vitamin A and C
Rich in Iron, Folate
Rich in Lutein and zeaxanthin - reduce the risk of macular degeneration
Relatively low in calories as it’s filled with water
Good fiber content - 7 gm in 1 cup
Rich in antioxidants
Ingredients:
3/4 cup of pumpkin spice flavored almond coconut creamer and water
2 tbsp chia seeds
1 teaspoon of pumpkin spice (From Trader Joe's)
1/2 teaspoon date syrup (From Whole Foods)
2 tbsp unsweetened pumpkin purée (From Whole Foods)
1 teaspoon nuts (I used pumpkin seeds yesterday and walnuts today)
1 teaspoon maple extract (not syrup) (From Whole Foods)
Instructions:
Combine ingredients and let it gel in the fridge
