To cook quinoa
✅1 1/2 cups quinoa - rinse and drain
✅2 3/4 cups of vegetable/ chicken stock
✅1/4 cup lemon juice
Dressing :
✅1/4 cup Extra Virgin Olive Oil
✅1/4 cup fresh lemon juice
✅3/4 cup chopped basil leaves
✅1/3 cup chopped parsley
✅1 tbsp chopped fresh thyme
✅2 teaspoon lemon zest
✅Salt and pepper to taste
