Homemade Parfaits

Dr. Sonal Haerter

I prefer home made parfaits. They are quick and significantly healthier than store bought.

I have seen some Açaí bowls that are out of the world beautiful but have over 50 gm of sugar. I love fruits and they are my favorite sweeteners, but I am cautious about how many fruits I am consuming in one meal. This recipe yielded about 5 servings of this size.

Ingredients:

  • 1 mango

  • 1/2 banana

  • 5-7 raspberries

  • 1 cup cashew yoghurt (or use any yoghurt of your choice)

  • 1/2 mango chopped for topping

  • Rolled oats 4 tbsp (1 tbsp for each jar)

  • 2 tbsp of Basil seeds

  • Granola (I use Purely Elizabeth) it has added sugar so cautious use

  • 1/2 teaspoon cardamom

Instructions:

  1. Blend cashew yoghurt, banana, mango and cardamom in a blender to a smooth consistency.

  2. Layer your mason jars with rolled oats, mango yoghurt and granola.

  3. Top it with any fruit of your choice!
