Cilantro Mint Carrot Pasta

My go to comfort food is pasta!



It’s spicy, tangy, and minty, but healthy and let me tell you, super tasty!


Ingredients:

  • 2 cups of carrot pasta (I bought it from a local vendor!)

  • 1 cup cilantro

  • 1 cup parsley

  • 1/4 cup fresh mint

  • 1/2 green chili (Optional: keep the seeds)

  • 1/2 lemon juice

  • 1 teaspoon ginger paste

Instructions For The Sauce (Indian Version of Pesto):

  1. Add cilantro, parsley, mint, green chili, lemon juice, and ginger paste in a blender with some water and blend it into a pesto sauce!

  2. Boil the pasta

  3. Drain water

  4. Add your pesto into a pan with 1 teaspoon of olive oil.

  5. Stir for a few minutes, lower the heat, and add in your pasta.

  6. Add salt to taste salt and let the pasta and pesto cook for a couple of minutes.


Instead of traditional nuts, I added home made spicy baked garbanzo beans. Honestly, I did not miss the traditional cheese or cream!
