My go to comfort food is pasta!


It’s spicy, tangy, and minty, but healthy and let me tell you, super tasty!
Ingredients:
2 cups of carrot pasta (I bought it from a local vendor!)
1 cup cilantro
1 cup parsley
1/4 cup fresh mint
1/2 green chili (Optional: keep the seeds)
1/2 lemon juice
1 teaspoon ginger paste
Instructions For The Sauce (Indian Version of Pesto):
Add cilantro, parsley, mint, green chili, lemon juice, and ginger paste in a blender with some water and blend it into a pesto sauce!
Boil the pasta
Drain water
Add your pesto into a pan with 1 teaspoon of olive oil.
Stir for a few minutes, lower the heat, and add in your pasta.
Add salt to taste salt and let the pasta and pesto cook for a couple of minutes.
Instead of traditional nuts, I added home made spicy baked garbanzo beans. Honestly, I did not miss the traditional cheese or cream!
