Carrot Cake Anyone?

Get your complex carbs, fruit, protein without compromising the flavors with this recipe!

Ingredients:

  • 2 tbsp steel cut oats

  • 1 cup shredded carrots

  • 1 teaspoon cinnamon

  • 1/2 teaspoon Clove powder

  • 1/2 teaspoon ginger powder

  • 1 apple chopped in small pieces

  • 5-7 dried cherries chopped (raisins are better but I did not have them)

  • 1/3 cup flax milk

  • 1 cup water

  • 1 tbsp shredded coconut unsweetened

  • 1 tbsp granola or any other topping

  • 1 tbsp walnuts

Instructions:

  1. Boil water, add dry spices and steel cut oats. Let them cook for about 3-4 mins

  2. Add chopped apple

  3. Once apples are soft (2-3 min) add flax milk, cherries. Let it cook for another minute and then let it cool down

  4. Pour it in a bowl and top it with any toppings your Haert desires!

  5. Carrots, spices, walnuts and cherries / raisins makes it very carrot cake like!
