The Green Pasta

Eat your greens with this delicious, creamy, vegan pasta!

This pasta is gluten free, dairy free, and oh-so yummy for a quick, easy dinner!


Ingredients for Pasta:

  • Cauliflower or Red Lentil Pasta

  • 1-2 cups of arugula

  • 1 cup of microgreens

  • 2 TBSPN of hemp seeds

  • salt & pepper to taste

Ingredients for Sauce:

  • 1/2 cup of cashews

  • 1 avocado

  • Green chili (seeded or deseeded)

  • 1 cup of cilantro

Instructions:

  1. Cook pasta per box instructions (caution on over cooking - unlike traditional pasta this is more fragile)

  2. Strain water

  3. For your sauce, blend all ingredients with a little bit of water, then add your sauce to the pasta.

  4. Mix it gently with fork

  5. Add your greens

  6. Adjust your salt and pepper

  7. Top it with hemp seeds
