Spicy Green Garam Masala Mac N' Cheese

This legit is an adult favorite kid food! A perfect comfort food!

This is such a yummy all out comfort food. Crowd pleaser and soul satisfier! 💚 For full flavor I recommend not replacing any of the above ingredients! If you do let me know how you like it!


Ingredients:

  • 2 cups of shell pasta (I got mine from Whole Foods)

  • 1 cup 2% milk

  • 1 cup of cilantro

  • 1 tbsp ginger paste

  • 1 tbsp garlic paste

  • 1-2 spicy green chilies (you can use half or more than 2 based on spice tolerance) I keep the seeds but you can choose to remove them

  • 1/2 tbsp garam masala (Indian store)

  • 2-3 tbsp all purpose flour

  • 1/2 cup shredded pepper jack

  • 1/2- 3/4 cup shredded Cheddar

  • Salt and pepper to taste

  • 1/2 chopped onion

  • 1 tbsp avocado oil

Instructions:

  1. Heat a pan and add oil

  2. Add onion and roast until golden and soft

  3. Lower heat and add ginger garlic paste. Keep stirring and make sure it does not burn (about 3-5 minutes)

  4. Add flour and mix it well. Roast for 2 minutes

  5. Add milk and mix the flour well. Make sure it’s smooth with no lumps

  6. Blend cilantro and green chili with water to a smooth paste and add it to your flour Bechamel (flour milk mixture)

  7. Mix well

  8. Add cooked pasta (cook per box instructions). I cook Al Dente

  9. Stir gently until each shell is covered in the sauce

  10. Add your cheeses and adjust your salt and pepper
