Roasted Bell Pepper Pasta

Cooking is my escape and it’s my meditation! I made this pasta sauce for the first time and I love it! Never buying jarred pasta sauce again!

Ingredients:

  • 1 large onion, finely diced

  • 4 large tomatoes

  • 6 -8 cloves of garlic

  • Fresh basil

  • 1 tbsp of dry thyme

  • 1 tbsp of dry oregano

  • 1 teaspoon of grape seed oil

  • 4 red bell peppers

  • Salt and pepper to taste

  • Almond milk (or any milk your Heart desires!)

  • Red lentil pasta (1 serving, 25 gm of protein)

  • Red pepper flakes

  • Broccoli, steamed

Instructions:

  1. On the stove, roast onion and tomatoes with garlic, basil, thyme, and oregano in grape seed oil

  2. Bake 4 red bell peppers in the oven at 400°F for 30 minutes

  3. Add basil and bell peppers to the tomatoes on the stove. Add salt and pepper to taste

  4. When it's all cooked, blend this into a fine paste with almond milk

  5. Cook your red lentil pasta based on the box instructions

  6. Once cooked, drain your pasta and add it to your sauce. Coat your pasta

  7. Finish your pasta with red pepper flakes and add steamed broccoli and basil
