Pumpkin Pie Oats

I woke up dreaming of pumpkin pie! Here is my version of pumpkin pie.

Ingredients:

  • 2 tbsp of steel cut oats

  • 1 cup of water

  • 1 teaspoon of pumpkin spice

  • 2-3 tbsp pumpkin purée (unsweetened)

  • 1 banana

  • 2 tbsp coconut cream

  • 1 tbsp protein powder - I used Whole Foods 365 plant protein powder coconut almond

  • Pumpkin seeds to top



Instructions:

  1. Steel cut oats cooked in the water

  2. Once it’s half way cooked I added pumpkin spice, purée and 1 tbsp coconut cream

  3. Once almost cooked I added mashed up banana

  4. Once cooled, top it with whipped coconut cream (melted here because I was desperate to eat).

  5. Top it with nuts!

This recipe made 2 servings.
