I woke up dreaming of pumpkin pie! Here is my version of pumpkin pie.

Ingredients:
2 tbsp of steel cut oats
1 cup of water
1 teaspoon of pumpkin spice
2-3 tbsp pumpkin purée (unsweetened)
1 banana
2 tbsp coconut cream
1 tbsp protein powder - I used Whole Foods 365 plant protein powder coconut almond
Pumpkin seeds to top
Instructions:
Steel cut oats cooked in the water
Once it’s half way cooked I added pumpkin spice, purée and 1 tbsp coconut cream
Once almost cooked I added mashed up banana
Once cooled, top it with whipped coconut cream (melted here because I was desperate to eat).
Top it with nuts!
