Plant Based High Protein Sandwich

You are looking at almost 20 gm of protein, 12gm of fiber super delish, filling, low glycemic (does not spike your blood sugars) sandwich! Bonus - no animal protein, plant based and under 15 minutes!

Ingredients:

  • 2 slices of low sodium Ezekiel bread (From Trader Joe's)

  • 1/2 can cooked garbanzo beans

  • 1/2 avocado

  • 1 teaspoon Tahini

  • 2-3 tbsp hot spicy pico de Gallo (From Trader Joe's)

  • 1/4 cup spinach leaves

  • 1 tbsp cooked chopped broccoli

  • 1 teaspoon cilantro chopped

Instructions:

  1. Mash the garbanzo beans, add tahini, avocado, salsa, cilantro. Adjust your spice per your needs

  2. Layer it on toasted bread, sprinkle spinach, broccoli and cilantro

  3. Enjoy 😊
