Lemon Turmeric Quinoa

Healthy, protein packed, and delicious! Great for dinners!

Ingredients:

  • 1 cup of quinoa washed

  • 2 cups of water

  • 1 teaspoon of turmeric

  • 1 teaspoon black pepper

  • 2 tbsp lemon juice

  • Salt to taste

  • 1 /2 cup of chopped cilantro

  • 1 cup Garbanzo beans cooked

  • 1 chopped Avocado

Instructions:

  1. Cook Quinoa with water and all the ingredients listed except avocado

  2. Top it with avocado

  3. Optional: Add some spice! I added a spicy Indian lemon pickle and it was delish!!
