Green Spicy Pasta

Get your share of veggies with this recipe!

Ingredients:

  • 2 cups of cooked red lentil pasta

  • Portobello mushrooms chopped 2 cups

  • Fresh green peas 1 cup

  • Microgreens

Green Sauce:

  • 1 canned white beans

  • 1 cup cilantro

  • 2-3 tbsp fresh mint

  • 2-3 garlic cloves

  • 1 spicy green chili (optional)

  • 1/2 cup cashews

  • 1/2 cup nutritional yeast

  • Salt and pepper to taste

  • 1 tbsp lemon juice

  • 1 cup of any greens - I added arugula

Blend the above to a smooth sauce.


Instructions:

  1. Cook the pasta based on your box instructions.

  2. When pasta is almost cooked, add your peas. Drain the water and let the peas cook in the steam for a couple of minutes.

  3. Add your green sauce.

  4. Add precooked mushrooms.

  5. Adjust your spices and serve with micro greens!
