Get your share of veggies with this recipe!
Ingredients:
2 cups of cooked red lentil pasta
Portobello mushrooms chopped 2 cups
Fresh green peas 1 cup
Microgreens
Green Sauce:
1 canned white beans
1 cup cilantro
2-3 tbsp fresh mint
2-3 garlic cloves
1 spicy green chili (optional)
1/2 cup cashews
1/2 cup nutritional yeast
Salt and pepper to taste
1 tbsp lemon juice
1 cup of any greens - I added arugula
Blend the above to a smooth sauce.
Instructions:
Cook the pasta based on your box instructions.
When pasta is almost cooked, add your peas. Drain the water and let the peas cook in the steam for a couple of minutes.
Add your green sauce.
Add precooked mushrooms.
Adjust your spices and serve with micro greens!
