Gingerbread Steel Cut Oats

I woke up craving to eat oats I ate in London so I made this gingerbread flavored banana steel-cut oats! This turned out so yummy and no refined sugar! Gingerbread gets its flavor not just from spices, but from molasses! I did not want to use any molasses but this turned out sooooo good!

Ingredients:

  • 3 tbsp of steel cut oats

  • 1 cup of coconut milk (unsweetened)

  • 1 cup of water

  • 1 teaspoon cinnamon

  • 1 teaspoon cardamom

  • 1 teaspoon powdered ginger

  • 1/2 teaspoon nutmeg

  • 1 banana mashed up. Molasses will give it that gingerbread flavor. Maple syrup/honey/monk fruit will work too!

  • 8-10 cashews chopped

  • 4 Dried Cherries

Instructions:

  1. Cook steel cut oats with water, milk and all the spices

  2. Stir and add mashed up banana

  3. Adjust your spices per your liking

  4. Once cooked top it with 1/2 banana slices and caramelized with cinnamon (roast on a pan), chopped cashews, and cherries!
