Eggplant Potato With Spicy Peanut Sauce

Eggplant lovers, this recipe is for you!


Ingredients:

  • 5-6 small eggplants (Indian store)

  • 1 small onion small pieces

  • 2-3 potatoes peeled and sliced vertical (keep the size of eggplant & potatoes similar)

  • 1/2 teaspoon turmeric

  • 1 tbsp coriander powder

  • 1 tbsp cumin powder

  • 1 teaspoon cayenne/ chili powder

  • Salt to taste

  • 1/2 cup water

  • Cilantro leaves

  • 1/2 cup crushed peanuts

  • 1/2 lime juice

  • 1 tbsp oil for your pan (I used grape seed)

Instructions:

  1. Add 1 tbsp of oil to a hot pan

  2. Add onions and let them cook until they are golden in color

  3. Add potatoes and cover for a couple of minutes

  4. Add eggplant and mix well

  5. Add all the dry spices and mix well

  6. Add the water and scrape all the spices from the bottom of the pan

  7. Cover the pan and lower heat

  8. Once the potatoes and eggplant are cooked, add 1/2 cup crushed peanuts

  9. Squeeze 1/2 lime and top it with cilantro

  10. Eat it with rice or naan bread
