Other healthy pasta alternative options are Chickpea, red lentil, or green lentil pastas.
The texture of these pastas are significantly different especially the edamame pasta - it’s a lot more chewy! The key is SAUCE!! Make an awesome sauce and dress it with yummy vegetables and you will not mind the different texture.

Ingredients For the Sauce:
This is a modified pesto sauce. This green sauce was made from leftovers!
1 cup of left over salad greens
1/2 cup Arugula
2-3 spicy green chilies (you can take the seeds out for less spice)
1 tbsp grated ginger
Juice of 1/2 lemon
Let's Make the Pasta!
Add one tablespoon of olive oil in a pan
Add 1 cup of Garbanzo beans (can)
Add one teaspoon of red chili flakes and let them roast
Once slightly burnt at the bottom add your cooked pasta (follow instructions on the box for pasta. It cooks faster than other pastas)
Add your sauce and adjust your salt and pepper
Switch off the stove
I topped my pasta with canned artichokes, fresh arugula and tomatoes!
