Best part of this recipe is there is no butter or cream but it literally melts in your mouth!
Childhood special that I was craving all week and finally caved in. What if I told you, this one sauce made two different dishes - vegetarian and chicken plus some more that I can use for two more recipes on the future!
Ingredients:
3 large onions
3 large Roma tomatoes
2 tbsp ginger garlic paste
2 tbsp coriander powder
2 tbsp cumin powder
1 teaspoon turmeric
1 teaspoon of chili powder or paprika
3/4 cup of cashews soaked in 1 cup water
Salt to taste
1/4 cup cilantro
1 tbsp grape seed oil
1 cup Green peas
Instructions:
Heat oil in a pan and add roughly chopped onions. Let them cook until golden brown
Add ginger garlic paste and water. Let it cook for 2 minutes
Add all your dry spices and mix well
Lower heat and let it cook for another 2 mins
Add tomatoes
Cover and let it cook until the tomatoes become mushy and soft
Add your cashews and cook for another 4-5 mins
Blend this mixture in a high speed blender to a smooth paste.
Add paneer (I roasted in a shallow pan until golden brown)
Mix well and cook for another 5 minutes and then add frozen green peas
Add salt to taste
Once cooked garnish with green peas
Voila creamy buttery mutter paneer is ready! I divided the sauce in 4 portions.
One for this dish, second for butter chicken and 2 in the freezer to be used for another week!!
