Eat your greens with this yummy zoodles recipe!

Ingredients:
2 cups of zucchini noodles (From Trader Joe's)
1/2 cup English peas
Chutney made from:
1/2 cup cilantro
1/4 cup mint
1/2 lemon juice
1/4 cup fresh grated coconut (bought from frozen section Indian store) you can use coconut milk instead
1 teaspoon ginger grated
1/2 Thai green chili (Thai chili is very spicy - adjust based on your spice level)
1/2 cup of water
Instructions:
Blend chutney ingredients with 1/2 cup water
Spray one spritz of coconut oil into a pan
Add zucchini noodles and peas. Roast them for a couple of minutes
Add the chutney, salt to taste and cook for another 4-5 min. Cover it for a minute so they don’t get soggy
Top it with half an avocado!
