Upma is a traditional Indian breakfast made from semolina, onions, chilies, ginger and lemon. It’s a very high carbohydrate dish! I am loving this cauliflower medley (from Trader Joe's in the vegetable aisle)
Ingredients:
Coconut Oil Pam Fry
1 teaspoon of cumin
1 teaspoon of mustard seeds
1 teaspoon of turmeric
1 Sprig of Curry Leaves (optional)
Red chili for spice (optional)
Vegetable Medley (From Trader Joe's)
English Peas
1/4 cup of water
Salt to taste
Instructions:
Spray coconut oil pam fry in a heated pan
Add cumin and mustard seeds and let them splutter on low heat for about 45 seconds
Add one sprig of curry leaves and red chili for spice (optional)
Add turmeric and let it cook. Caution - heat on low otherwise it will burn
Add your vegetable medley and English peas from Trader Joe’s
Add 1/4 cup water, mix and let it cook
Add salt to taste
