If you like carrot cake this will be your new favorite winter oats recipe!
This recipe makes 3 servings. I added one banana to each serving as well!
Ingredients:
3 tbsp of steel cut oats
1 cup of shredded carrots
1 sliced banana
2 cups water
1/4 cup plant based milk (I used flax)
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1/2 teaspoon ground clove
1/2 teaspoon ground nutmeg
1 teaspoon date syrup / maple
1 tbsp raisins
1 tbsp chopped walnuts
Instructions:
Boil water with all the dried spices.
Add the oats. Cook them until they are almost cooked (3-5 min).
Add carrots, date syrup and adjust your dried spices if you would like.
Once steel cut oats are cooked and carrots are soft switch off the flame and add milk.
For the bananas - I caramelized them on nonstick pan. I used half in the pudding and half to top it. Same with walnuts and raisins.
You can use maple syrup to sweeten instead of banana but I personally like banana in my puddings due to its fiber content & vitamin k!
Carbs have gotten a bad rep... not all carbs are designed the same. Complex carbs like the ones in oats and natural fruits given you the much needed fiber, stabilize your blood sugars, keep you fueled and full for several hours!
