Red lentil pasta in a cannelleni bean and salsa sauce!
Ingredients:
2 cups of red lentil pasta
1/2 cup of english peas
1 cup of shiitake mushrooms
1-2 cups of arugula
1 cup of micro greens
Sauce:
1 cup of potato leek soup (Whole Foods)
1 can cannellini beans
4-5 tbsp spicy salsa (Trader Joe's)
Instructions:
Boil pasta per box instructions
Add english peas in the same water as soon as you switch off the heat. Let the pasta and peas sit in the water
Saute mushrooms
Make your sauce by blending potato leek soup, beans and salsa. Adjust your spice as you like it!
Mix the pasta, mushrooms, and sauce
Add you greens
Adjust your salt and pepper
