Almond Coconut Halwa

A Diwali treat!


Ingredients:

  • 1 cup of almond meal

  • 1/2 cup of almond flour

  • 1/2 cup of coconut flour

  • 1 cup of coconut sugar

  • 1 tsp cardamom powder

  • 2 tbsp clarified ghee

  • 2 cups of 2% fat reduced sugar milk (Whole Foods)

Instructions:

  • Heat the ghee on low flame

  • Add almond meal and almond flour

  • Roast until it's golden. Make sure it does not burn

  • Once it's golden brown, add coconut flour and cardamom

  • Roast it for 2 minutes and then add sugar

  • Mix and roast for another minute, then add the milk

  • Break up any lumps and make it smooth. Keep stirring - it takes some time to firm it into a Halwa / puffing consistency

  • Switch off the heat and let it cool for 5 minutes
