Almond Banana Peanut Butter Cookies

Ingredients:

  • 2 yellow bananas

  • 1 cup + 2 tbsp almond meal (From Trader Joe's_

  • 2-3 tbsp rolled oats

  • 2 tbsp creamy peanut butter

  • 1 teaspoon ground cardamom

  • 1/2 tbsp ground cinnamon

  • 1/2 teaspoon baking powder

  • Pinch of salt

  • 1 tbsp dry unsweetened coconut

  • 1 tbsp sweet cacao nibs


Instructions:

  1. Preheat your oven to 350°F

  2. Mash the bananas. Then add almond meal, cinnamon, cardamom, baking powder, salt and mix well

  3. Add peanut butter and mix evenly.

  4. Add oats (If the mixture is very sticky you can add a little more oats)

  5. Roll into balls.

  6. Flatten them and top them with dry coconut and cacao nibs. Bake them for 15 min.
