Whole Green Mung Dal (lentil) Savory Pancakes

Ingredients:

  • 2 cups of whole dry mung dal / lentils soaked over night.

  • 1 cup cilantro

  • 1 tbsp ginger grated

  • 2 green chilies

  • 1/2 onion chopped

  • salt to taste





Instructions:

  1. Blend overnight soaked lentils with all other ingredients to make it into a smooth batter. Adjust your salt

  2. Spray Pam fry oil and pour the batter

  3. Gently move the spoon to make it into crepe like structure

  4. Cook on both sides

I ate this with spicy salsa, guacamole and spicy mayo. Green mung is packed with protein, fiber, and vitamin b. Also consists essential amino acids. Keeps you full and stabilizes your blood sugar.
