Meatless Monday’s! For me it’s meatless everyday. However for my boys this has been a new concept. My husband who has been a meat lover all his life has recently changed his lifestyle to ‘no meat / animal products at home (Mon-Friday) and indulge in his fav steak / chicken/ fish dishes on weekend’s. You know what that means - I can cook one pot meal for the whole family.
This recipe is under 30 min if you have all the ingredients. All Ingredients are from Trader Joe's! This is so filling and covers fiber, protein, complex carbs, vegetables and no compromise on flavors. You can eat it with a piece of whole grain toast, baked chips or avocado 🥑
Ingredients:
2 containers of low sodium vegetable stock
1 box of cooked red lentils (found on the vegetable section)
1-2 containers of fresh hot salsa (located near the cheeses)
Any vegetables you like - I added carrots, green beans, sweet potatoes
Italian dried seasoning (spice section)
1-2 cups of fresh kale chopped
Juice of 1-2 lemons
Salt to taste
Instructions:
Bring the stock to a boil, add vegetables and when they are half cooked add lentils, salsas, lemon juice, salt, Italian seasoning.
Stir and let it simmer on low heat.
Add kale at the end.
Enjoy!
For sides I had chopped cucumber, snap peas, jicama and berries!
