Super Greens Salad

Very Green Salads are my favorite! Even in cooler temperatures I enjoy my salads!

Ingredients to Build Your Salad:

  • 6 Persian cucumbers chopped

  • 1 cup chopped spinach

  • 1/4 cup chopped red onions

  • 1/2 cup soaked yellow gram lentils. I soaked them in a cup of water for a couple of hours. Drained water and used the lentils

  • 1/2 cup chopped cilantro

  • 1 Semi ripe firm pear chopped

  • 1 jalapeño de seeded and chopped

  • 1 Avocado chopped

Dressing Ingredients:

  • 1/4 cup lemon juice

  • 1/4 cup orange juice

  • Salt and pepper to taste

Let's Make a Salad!

  • Combine all ingredients together in a bowl

  • Add your dressing and adjust your salt and pepper to taste

  • Enjoy!
