Spinach and Garlic Lentil Soup

This is my mom’s recipe that is meal in one for vegetarians!

Ingredients:

  • Yellow Lentils (cook based on instructions)

  • 1 teaspoon of coconut oil

  • 1 teaspoon of cumin seeds

  • 1 teaspoon of whole mustard seeds

  • 1 deseeded green chili

  • 8-9 slightly crushed garlic cloves

  • 1 chopped onion

  • 3 teaspoons of turmeric

  • 3 teaspoons of cumin powder

  • 3 teaspoons of coriander powder

  • Salt to taste

  • 6-7 cherry tomatoes

  • 2 cups of spinach

Instructions:

  1. Cook your yellow lentils based on instructions

  2. In a separate hot pot, add coconut oil, cumin seeds, and whole mustard seeds.

  3. Once they splutter then add a deseeded green chili, garlic, and chopped onions. Let it cook until onions are golden brown. Make sure garlic does not burn.

  4. Add turmeric, cumin powder, coriander powder and salt to taste

  5. Finally, add cherry tomatoes and spinach. Boil for another 1 minute and soup is ready!!
