Spicy Sesame Green Beans

Dr. Sonal Haerter

This is a family favorite and a great side!

Ingredients:

  • Green beans, ends trimmed

  • 1/2 teaspoons of sesame oil

  • 1/2 finely chopped onions

  • 1 tbsp ginger paste (fresh is better).

  • 3-4 tbsp coconut amino sauce (From Trader Joe's)

  • 1/2 tbsp Sriracha (I added coconut Sriracha )

  • Salt to taste

  • 1 tbsp of sesame seeds

  • 1 tbsp roasted unsalted peanuts

Instructions:

  1. Boil green beans in hot water for 2-3 minutes, then blanch in ice cold water. This preserves the green color and crunch

  2. Heat 1/2 teaspoon of sesame oil

  3. Add 1/2 finely chopped onions and cook until golden brown

  4. Add ginger paste

  5. One cooked, add green beans and mix well

  6. Cook for about a minute, then add coconut amino sauce, sriracha, salt to taste, sesame seed, and roasted unsalted peanuts

  7. Cook for about 3-4 minutes

This was a big hit with all the ages!
