Spicy Quinoa Cauliflower Pistachio Mexican Bowl

The perfect dinner when you're not in the mood to cook!

A healthy meal when you're limited on time! This literally was under 15 min from start to end! Pro tip: stock up on frozen foods from Trader Joe's and add your own twist!


Ingredients:

  • Choose your favorite greens! I used spinach, arugula, and kale

  • Spicy Salsa

  • Quinoa

  • Frozen Vegetables: Cauliflower, corn, etc.

  • Pre-cooked Lentils (From Trader Joe's)

  • Avocado

  • Nuts

  • Chili Pistachios


Instructions:

  1. Quinoa washed and cooked in vegetable stock

  2. Once the quinoa is almost cooked, add in your frozen vegetables of choice. Here I have cauliflower and corn. You could use edamame, beans, carrots, peas, or whatever your Haert desires!

  3. Stir in your salsa

  4. Switch off the heat and add your greens and cover the pot for the greens to cook. I like my greens crispy!

  5. Add in pre-cooked lentils

  6. Squeeze some lime or lemon juice on top

  7. Add avocado and nuts to finish
