Roasted Squash Salad

This salad will really wow the crowds!

This salad is a party pleaser and packed with healthy ingredients. Packed with fiber, complex carbohydrates (carbs that stabilize blood sugars, keep you full), good fats (monounsaturated fats), plant based protein


Salad Ingredients:

  • 2 cups cooked quinoa

  • 2 cups cooked green beans

  • 1 cup canned garbanzo (drained and washed)

  • 1 cup baked chopped squash

  • 1/2 cup baked chopped red onion

  • 1/2 cup dried cranberries/ cherries

  • 1/2 cup Thai flavored spicy cashews (From Trader Joe's_

  • Salt and Pepper

Salad Dressing Ingredients:

  • Juice of 2 lemons

  • Juice of 1 ripe orange

  • Salt

  • Pepper

  • Red chili flakes

  • 2 tbsp EVOO (optional if you want it richer)

Tips For Your Veggies:

  • Green beans - I like them crispy, firm and green. I boil them in water for 4-5 min and then immediately drop them in ice water for a couple of min. Then drain and keep them aside

  • Quinoa - rinse, cook in water and 1 teaspoon of salt.

  • Squash and onions - salt and pepper, olive oil and bake at 350 F for 25-30 min

  • Add salad dressing and nuts just before serving. Adjust your salt and pepper per your taste
