Rainbow Salad

Eat your greens with this colorful and delicious salad!

It’s creamy and crunchy and juicy all at the same time!


Ingredients:

  • 1 cup kale marinaded with lemon juice and freshly squeezed OJ (1 tbsp) salt and pepper to taste. Marinade and place it in the fridge for an hour. It softens the Kale and makes it flavorful

  • 1/4 cup of English peas (From Trader Joe's)

  • 1/2 Avocado

  • 1/2 cup squash baked with chili lime seasoning (From Trader Joe's)

  • 1/2 cup of mixed berries

  • 8 walnuts crushed

Instructions:

  1. Mix everything together but the walnuts

  2. Keep it in the fridge for 30 min (optional)

  3. Top it with walnuts

  4. Enjoy!
