Quinoa Kale Squash Tahini Salad

Tahini dressing is by far one of my favorite salad dressings. You can prepare a batch and use it all week.


Ingredients:

  • Mixed greens

  • 1 cup marinade: 1 teaspoon lemon juice + 1 teaspoon Orange juice, salt & pepper)

  • 1 cup of kale shredded with lemon juice

  • 1 cup Quinoa

  • 1 cup oven roasted Squash

  • 1 cup oven roasted sweet potatoes

  • 3 tbsp of chopped nuts (walnuts here)

  • 10 chopped grapes (I love grapes in salads!)

Tahini Dressing:

  • 2 tbsp tahini

  • 1 teaspoon of Sriracha

  • Mix and add water until it reaches your desired consistency

Meal prep is an important step in my life. I bake all my veggies on the weekend with spicy chili lime spice (From Trader Joe's). All I have to do is assemble my greens, marinade with lemon juice and salt and top it with veggies and Tahini!!
