Quick Lentil & Quinoa Dinner

No time to prepare dinner? How about a complete dinner in under 30 min!

Quinoa with Kale Under 10 Minutes

Ingredients:

  • 1 cup of Quinoa

  • 2 cups of sodium fat free vegetable stock

  • Salt to taste

  • 1/2 cup kale

Instructions:

  1. Wash your quinoa

  2. Boil 2 cups of low sodium fat free vegetable stock. Add salt to taste

  3. Once boiling, add your quinoa

  4. Let it boil for 3-4 min, cover and switch of the gas

  5. I added my kale at the end

Spicy Lentils

Ingredients:

  • Precooked lentils from Trader Joe's

  • 1 Cup of tomato red pepper soup from Trader Joe's

  • 1/2 cup of water

  • 1/2 container of spicy salsa

Instructions:

  1. Heat ingredients in the microwave or stove top (literally under 5 min)

These black lentils are a great source of protein, fiber and iron


Let's Put It All Together!


In a bowl or on a plate, add your quinoa, spicy lentils, chopped greens (persian cucumbers, edamame, micro greens, english peas, avocados), tomatoes, carrots, etc. and voila dinner is served!
