Purple Sweet Potatoes With Spicy Green Chilies & Crushed Peanuts

This is one of my favorites!


This is a great side dish. The spicier the better because sweet potatoes are naturally sweet! The peanuts give a great crunch and flavor.


Ingredients:

  • 2 purple sweet potatoes (peeled and boiled) diced into small pieces

  • 3-4 slices green chilies

  • 1 tbsp cumin seeds

  • 1 tbsp oil

  • Salt to taste

  • 1/2 cup peanuts - crushed in a blender

Instructions:

  1. Heat a pan and add oil

  2. Once hot add cumin seeds. Once they splitter add green chilies. Use a spoon to ensure the chilies don’t burn.

  3. Add potatoes. Coat them with oil.

  4. Add salt and crushed peanuts!

  5. Optional: add 1 tbsp of ghee
