This is one of my favorites!

This is a great side dish. The spicier the better because sweet potatoes are naturally sweet! The peanuts give a great crunch and flavor.
Ingredients:
2 purple sweet potatoes (peeled and boiled) diced into small pieces
3-4 slices green chilies
1 tbsp cumin seeds
1 tbsp oil
Salt to taste
1/2 cup peanuts - crushed in a blender
Instructions:
Heat a pan and add oil
Once hot add cumin seeds. Once they splitter add green chilies. Use a spoon to ensure the chilies don’t burn.
Add potatoes. Coat them with oil.
Add salt and crushed peanuts!
Optional: add 1 tbsp of ghee
