An easy, flavorful dinner!

Ingredients:
1 cup of quinoa washed
1 1/2 cup black bean soup (From Trader Joe's)
1 /2 cup water
Vegetables of your choice
Salsa - hot and mild
Instructions:
Boil the soup and water combination and add quinoa. Let it boil and then lower the heat!
Add 1-2 tbsp of salsa. I do 1 of each salsa for some spice
Cover for 4-5 min
Add vegetables of your choice. I added black beans, edamame and broccoli (at the end)
Let it cook for 5-10 min more
Add water, salt and pepper as needed
Topped it with avocado!
