One Pot Quinoa Soup

An easy, flavorful dinner!

Ingredients:

  • 1 cup of quinoa washed

  • 1 1/2 cup black bean soup (From Trader Joe's)

  • 1 /2 cup water

  • Vegetables of your choice

  • Salsa - hot and mild

Instructions:

  1. Boil the soup and water combination and add quinoa. Let it boil and then lower the heat!

  2. Add 1-2 tbsp of salsa. I do 1 of each salsa for some spice

  3. Cover for 4-5 min

  4. Add vegetables of your choice. I added black beans, edamame and broccoli (at the end)

  5. Let it cook for 5-10 min more

  6. Add water, salt and pepper as needed

  7. Topped it with avocado!
