This was so yummy you guys! The recipe is simple but has several steps.
Ingredients:
1 teaspoon of avocado oil
1/2 large onion
1 deseeded jalapeño (optional: keep a few seeds for spice)
1/2 cup of fresh grated coconut (available in frozen section)
1 cup water
Cilantro (optional)
1 tbsp of turmeric
1 tbsp cumin powder
2 tbsp coriander powder
Sweet potatoes
Lentil (soaked overnight)
1 tbsp tamarind
1/4 cup raw peanuts
Salt to taste
Tamarind pulp (can be found in Indian groceries or you can replace this with 2 tbsp of lemon juice!)
Instructions:
Heat avocado oil in a pan and roast onion and jalapeño. Once the onion is toasted golden brown, add fresh grated coconut. Cook for 3-4 minutes
Once cooked, blend this with 1 cup of water and a handful of cilantro (optional)
In the same pot, add water, turmeric, cumin power and coriander power. Let it boil
Add sweet potatoes and lentils
Once it starts boiling add the blended onion, cilantro paste and salt
Cover and cook until lentils are soft
Add tamarind and raw peanuts the last few minutes of cooking
Adjust salt as needed
Garnish with cilantro and enjoy!
