Khichdi

This is a popular recipe in India! Packed with fiber, protein. Traditionally rice and lentils are cooked together. I replaced rice with quinoa for added fiber and protein.

Meal in one and under 30 min including prep time!

Ingredients:

💛1 cup yellow lentils - washed and soaked in water for 30 min

💛1 cup red lentils - washed and soaked for 30 min

💛1 cup quinoa washed and soaked for 15 min

💛1 cup green beans

💛1/2 cup carrots

💛1/2 cup peas

💛1-2 cups greens ( kale/ spinach )

💛2 tbsp ginger garlic paste

💛1 teaspoon ground turmeric

💛1 teaspoon Gadam masala

💛1/2 teaspoon chili powder

💛1 lemon - juiced

💛1 tbsp avocado oil

💛1 teaspoon of cumin seeds

💛1 teaspoon of mustard seeds

💛 1-2 teaspoon salt

💛 1/4 cup chopped cilantro


Instructions:

  1. Heat the oil, add mustard and cumin seeds. Let them splutter.

  2. Add ginger garlic paste. Make sure you stir because it burns easily.

  3. Add your lentils and quinoa. Add 5-6 cups of water. Let it boil.

  4. Add all the spices.

  5. Cover your pressure cooker / instapot.

  6. Cook according to the instructions.

  7. Once cooled down add steamed veggies to this and mix well.

  8. I don’t like to overcook my veggies and hence I steam them in microwave . Squeeze lemon juice, adjust your salt and top it with cilantro
