This is a popular recipe in India! Packed with fiber, protein. Traditionally rice and lentils are cooked together. I replaced rice with quinoa for added fiber and protein.
Meal in one and under 30 min including prep time!
Ingredients:
đź’›1 cup yellow lentils - washed and soaked in water for 30 min
đź’›1 cup red lentils - washed and soaked for 30 min
đź’›1 cup quinoa washed and soaked for 15 min
đź’›1 cup green beans
đź’›1/2 cup carrots
đź’›1/2 cup peas
đź’›1-2 cups greens ( kale/ spinach )
đź’›2 tbsp ginger garlic paste
đź’›1 teaspoon ground turmeric
đź’›1 teaspoon Gadam masala
đź’›1/2 teaspoon chili powder
đź’›1 lemon - juiced
đź’›1 tbsp avocado oil
đź’›1 teaspoon of cumin seeds
đź’›1 teaspoon of mustard seeds
đź’› 1-2 teaspoon salt
đź’› 1/4 cup chopped cilantro
Instructions:
Heat the oil, add mustard and cumin seeds. Let them splutter.
Add ginger garlic paste. Make sure you stir because it burns easily.
Add your lentils and quinoa. Add 5-6 cups of water. Let it boil.
Add all the spices.
Cover your pressure cooker / instapot.
Cook according to the instructions.
Once cooled down add steamed veggies to this and mix well.
I don’t like to overcook my veggies and hence I steam them in microwave . Squeeze lemon juice, adjust your salt and top it with cilantro
