Kale Grape Tahini Salad

This salad is my all time favorite salad! It’s simple, very little preparation but delish!!

Ingredients:

  • 4 cups of shredded baby kale

  • 1 cup chopped grapes 🍇

  • 1 cup cooked quinoa

  • 1/2 cup spiced nuts (I used cashews)

  • 1/2 cup hemp seeds

  • 1/2 Parmesan shredded

Ingredients For Dressing:

  • Juice of 2 lemons 🍋

  • 1 tbsp tahini

  • Salt and Pepper to taste

  • 4 tbsp water

  • 1 teaspoon honey

Instructions:

  1. Mix all the salad ingredients to make it into a smooth dressing consistency. Add water if needed as well as adjust the spices!

  2. I massage the shredded kale with 2 teaspoons of lemon juice at least 1 hour before serving. Stick it in the fridge for a few minutes.

  3. Before serving add the rest of the ingredients including hemp seeds.

  4. Pour your dressing, top it with Parmesan and enjoy!
