This salad is my all time favorite salad! It’s simple, very little preparation but delish!!
Ingredients:
4 cups of shredded baby kale
1 cup chopped grapes 🍇
1 cup cooked quinoa
1/2 cup spiced nuts (I used cashews)
1/2 cup hemp seeds
1/2 Parmesan shredded
Ingredients For Dressing:
Juice of 2 lemons 🍋
1 tbsp tahini
Salt and Pepper to taste
4 tbsp water
1 teaspoon honey
Instructions:
Mix all the salad ingredients to make it into a smooth dressing consistency. Add water if needed as well as adjust the spices!
I massage the shredded kale with 2 teaspoons of lemon juice at least 1 hour before serving. Stick it in the fridge for a few minutes.
Before serving add the rest of the ingredients including hemp seeds.
Pour your dressing, top it with Parmesan and enjoy!
