High Protein Salad

No cook high protein, MUFAs, low carb vegan bowl that will leave you wanting more!

I have been off track for over a week and really wanted to end this week with a clean healthy fresh dish!

This one is a winner!! You can even add cucumber or avocado! High protein, high fibre, Monounsaturated Fatty Acids(good fat) & complex carbs! This is a meal in one!! You feel full for a long time without triggering a sugar peak in your body!


Ingredients:

  • 1 cup sprouted green mung beans (Indian grocery or Whole foods).

  • 1 cup sprouted black chickpeas (high in protein)

  • 1/2 cup finely chopped red onion

  • 1 cup chopped cilantro

  • 1/2-3/4 cup roasted peanuts

  • 1/2 cup chopped cherry tomatoes

  • 1 tbsp cumin powder

  • 1 tbsp chaat spice (Indian grocery - gives a tangy flavor)

  • 1-2 tbsp lemon juice

  • Salt to taste

  • 1 chopped jalapeño - deseeded or seeded based on your preference

Instructions:

  1. Mix it all and keep it in the fridge for 30 minutes

*I soaked both the beans in water for a day. Rinse them before soaking. Drain the water and wrap them in a wet cheese cloth for 6-8 hours!
