Green Spicy Quinoa

Eat your greens with this recipe!

Ingredients:

  • 1 cup of quinoa washed

  • 2 cups of water

  • 2 small shallots

  • 1 green chili

  • 1 cup cilantro

  • 1 cup spinach

  • 1 cup kale

  • 1/2 cup mint

  • 8-10 pistachios or cashews

  • Juice of 1 lemon

  • 1 cup edamame

Instructions:

  1. Cook quinoa in 2 cups of water.

  2. Blend the shallots, green chili, cilantro, spinach, kale, mint, pistachios/cashews, and lemon together with water and salt

  3. Once quinoa is cooked, add edamame and the green sauce. Adjust spices / salt accordingly.
