Eat your greens with this recipe!
Ingredients:
1 cup of quinoa washed
2 cups of water
2 small shallots
1 green chili
1 cup cilantro
1 cup spinach
1 cup kale
1/2 cup mint
8-10 pistachios or cashews
Juice of 1 lemon
1 cup edamame
Instructions:
Cook quinoa in 2 cups of water.
Blend the shallots, green chili, cilantro, spinach, kale, mint, pistachios/cashews, and lemon together with water and salt
Once quinoa is cooked, add edamame and the green sauce. Adjust spices / salt accordingly.
