Dairy-Free Creamy Risotto

How about a creamy warm risotto without butter, cheese, rice or dairy! As the weather starts warming up I am thinking about meals - all in one - healthy , yummy and hassle free.

Made in under 25 minutes!


Ingredients:

  • 1 packet of frozen cauliflower rice (From Trader Joe's)

  • 2 lbs of shiitake mushrooms chopped

  • 1 cup greens (I used mixed greens)

  • 1 1/2 cup of nut milk (I used pistachio)

  • 1/2 cup of Non dairy Mozzarella

  • 1/2 cup nutritional yeast

  • 1 teaspoon olive oil

  • Salt and pepper to taste


Instructions:

  1. Heat oil in the pan. Add mushrooms. Sauté and let them cook for a couple of mins.

  2. Add the riced cauliflower packet. Straight from the freezer to the pan.

  3. Cover on low steam and let it cook.

  4. After 3-4 min add your milk and mix well. The milk might break up a little under heat but that’s ok.

  5. Add your mozzarella and nutritional yeast and let it all cook.

  6. Adjust your salt and pepper. Riced cauliflower cooks fast so do not overlook this. Taste if that helps determine.

  7. Once you switch off the heat add your greens. They cook with the heat.

  8. Add some fresh pepper on the top!

Yummy cauliflower risotto is ready!! Healthy, yummy and easy meal for all.
