Curried Garbanzo Spinach

How about greens, beans all in one meal! This dish with all the preparation is under 30 min if you use canned garbanzo.

Ingredients:

  • 1 large red onion - chopped fine

  • 2 medium size tomatoes chopped

  • 1 tbsp minced garlic

  • 1 tbsp ginger crushed

  • Cilantro 1 cup chopped

  • 1tbsp coconut oil

  • 2 bunches of fresh spinach or 1 large bag of spinach

  • 2 cans of garbanzo beans

  • 3 tbsp curry masala (I use ‘chole /garbanzo masala’ from Indian groceries)

  • 1 lemon

  • Salt to taste

Instructions:

  1. Heat oil in a pan and roast onions until golden brown, then add ginger garlic. Let it cook for a couple of minutes

  2. Add tomatoes and cook until they are pulpy

  3. Add half of the cilantro and lower heat

  4. Add curry masala / chole masala with 1/2 cup water. Let it cook for another 2 min.

  5. Add garbanzo beans (I washed them first)

  6. Meanwhile - blanch spinach for a couple of min in hot water - and then soak in cold icy water to maintain the color. Blend to a full purée. Don’t add much water as boiled spinach is easy to blend

  7. Add this to the garbanzo beans

  8. Salt to taste

  9. Cook until beans and spinach all cook together (4-5 minutes)

  10. All in one meal is ready!!

Cauliflower Rice:

  1. One spray of Pam fry oil and heat it in a pan

  2. Add 1 teaspoon of cumin and let it splutter

  3. Add 1 teaspoon of ghee (clarified butter) and then add 2 cups of riced cauliflower- mix

  4. Salt to taste and close it with a lid. Cook for about 4/5 min

  5. Mix it with the spinach garbanzo and enjoy!
