Cucumber Beet Garbanzo Salad

Healthy eating is contagious! Do you ever get hungry when you see other people eat? I do 🙋🏽‍♀️🙋🏽‍♀️🙋🏽‍♀️ I also feel super inspired by recipes posted on Instagram! Today’s salad is a baby of @dishanarangmd and @richamittalmd salads that they posted!

I could not wait to make them! And this very simple salad was super delicious 🤤

I made few tweaks but for the original recipes check out @dishanarangmd and @richamittalmd

Ingredients:

  • 5 Persian cucumbers chopped

  • 5-6 cherry tomatoes chopped

  • 1 can cooked garbanzo - washed

  • 1 cup cooked quinoa

  • 2 cooked beets - chopped

  • 1 cup chopped dill

  • 1/2 cup chopped mint

  • 1/2 cup chopped cilantro

  • 1 avocado chopped

  • Juice of 1 juicy lemon

  • Salt and pepper

Instructions:

  1. Combine all ingredients together in a large salad bowl

  2. Mix and enjoy!
