Chocolate Banana Bread

No refined sugars, no oil, no egg, no dairy, no gluten and no compromise on flavors!!

I ate this after my work out and let me tell you I could have finished the entire loaf!


Ingredients:

  • 2 cups of almond flour

  • 1/2 cup of coconut flour

  • 3 Tbsp of unsweetened cacao (more of you like it more chocolatey)

  • 1 teaspoon salt

  • 1 /2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 tbsp cacao butter melted (From Whole Foods)

  • 2 tbsp of flaxseed meal soaked in 3 tbsp water to make into gel

  • 1-2 teaspoon cinnamon

  • 3 1/2 very ripe bananas mashed up (don’t give up on those black bananas!)


Instructions:

  1. Preheat oven to 375°F

  2. Mix all the dry ingredients (almond flour, coconut flour, cacao, baking soda and powder, salt, cinnamon)

  3. Add flax meal gel (these act like eggs)

  4. Then add cacao butter (melted) and then mashed bananas

  5. Mix it together until it reaches the consistency of the flour is like of sticky dough. It’s not drippy like cake batter.

  6. Put it in a bread pan greased with coconut oil. I sprinkled some cacao nibs and pistachios on the top!

  7. Bake it at 375°F for 20-25 min

  8. Use a tooth pick to see if it’s all cooked

  9. Enjoy!
