Bok Choy Recipe : first time cooking BoK Choy 🥬
Trying to expand my consumption of greens beyond kale , spinach , arugula and mixed greens.
🥬4 cups of Bok Choy 🥬
🥬1 tbsp shredded ginger @wholefoods
🥬1 tablespoon of peanut coconut sauce @whole30recipes@wholefoods
🥬1 tbsp coconut aminos
🥬1 teaspoon Sriracha
🥬Salt to taste
Bok choy - Chinese cabbage - cruciferous family
🥬Rich in fiber, antioxidants.
🥬Rich in beta carotene, vitamin C, E and folate
🥬Rich in Quercetin- flavonoid that reduces inflammation. There by helping to reduce risk of heart disease , dm etc
🥬Rich in potassium , calcium and magnesium
🥬Rich in vitamin A and beta carotene - has half of daily vitamin A requirement.
🥬Low calorie - 1 cup of bokchoy - 9 calories , 2 gm of carb and 1 gm fiber , 1 gm protein
