Almond Flour Tortilla Tacos

Make these in less than 10 minutes!

This was amazing!! Full of nutritious veggies, simple to make and filling!! They were super 😋


Ingredients:

  • Almond tortillas (From Whole Foods)

  • 1 can of canned Cuban black beans (From Trader Joe's)

  • 4 trays of shiitake mushrooms (From Trader Joe's)

  • 1/2 cup of cilantro

  • 1 cup of shredded kale

  • 1 teaspoon of chili lime spice (From Trader Joe's)

  • 1 teaspoon of mushroom and company umami spice (From Trader Joe's)

  • Salt and pepper

  • 1 teaspoon cheese - I used pepper jack

  • Pam fry oil

  • Spicy salsa

Instructions:

  1. Mushrooms were cooked with the umami spice, spray of pan fry, salt and pepper. Add kale when mushrooms are almost cooked. Stir and keep it aside

  2. Cook the canned Cuban style beans with chili’s lime spice and cilantro. Let the liquid evaporate

  3. Heat your pan, place your tortilla on it. Let it get warm. Sprinkle cheese, put beans and mushrooms and serve it warm. We topped it with hot habernera salsa ❤️
