Almond Date Banana Bread

Refined sugar and gluten free! I have tried so many different ways to make banana bread.

Ingredients:

  • 1 1/2 cup almond flour

  • 1/2 cup coconut flour

  • 2 very yellow bananas mashed

  • 2 eggs

  • 2 tbsp coconut oil melted

  • 4-5 dates (soaked in 1/2 cup warm water and then blended into fine paste)

  • 1 teaspoon salt

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • Sweet cacao nibs

  • Walnuts are preferred, but pumpkin seeds are also a great choice!

Instructions:

  1. Preheat oven to 375°F

  2. Mix all the dry ingredients

  3. Mix bananas, eggs and oil in a separate bowl

  4. Add this to mixer and blend until everything is well combined

  5. Add chocolate chips and nuts

  6. Spray your pan with pam fry oil and then put in the batter

  7. Oven at 375°F for 35 min or until it passes the toothpick test
