4 Ingredient Salad

This was a crowd pleaser and so simple to make!

Ingredients:

  • 1 peach (not too juicy)

  • 2 Persian cucumbers or any cucumber

  • 1/2 cup chopped fresh mint

  • Something crunchy to top it. I used spicy crushed walnuts

Let's Make A Dressing:

  • Fat free Greek yoghurt (2 tbsp)

  • 2-3 tbsp fat free Feta

  • Chili Lime spice (from Trader Joe's)

  • Water

  • Blend the salad ingredients in a blender for smooth consistency

Instructions:

  1. Chop peach, cucumber and mint in equal small pieces

  2. Mix and top it with walnuts and dressing!
