Kale, Butter Lettuce Jalapeños Stuffed Olives & Avocado Salad

This was so refreshing! Great for a summer night!

Ingredients:

  • 1 cup of baby kale

  • 1/2 cup chopped butter lettuce

  • 1 ripe Avocado

  • 1/4 cup canned washed garbanzo beans

  • 5-6 jalapeños stuffed olives, chopped (From Trader Joe’s, in a jar) these olives are seriously bomb!!! They add so much flavor to any salad.

  • 1 Persian cucumber, chopped



Dressing:

  • Fresh Squeezed Lemon Juice from 1 Lemon

  • Lemon Zest

  • Salt

Instructions:

  1. Mix the kale with the dressing and add all the other vegetables

  2. Keep it in the fridge for at least 30 min!
